Perhaps no ingredient exemplifies the latter more than Hotaru Ika, firefly squid, best enjoyed for the short period when winter straddles spring. This baby’s home is Toyama Bay near Kanazawa, and unlike other types of squid, Hotaru Ika is usually served cooked – boiled.
