Suzuki is one of those fish that gets a different name depending on its age. Koppa, the youngest, then Haragu, then Seigo followed by Fukko at 2 to 3 years old. Like its family members, Fukko is a tasty Shiromi, with softer flesh and a sweeter aftertaste, and I don’t find it as firm as Suzuki if that’s your sort of thing.
