Also known in English as “Splendid Alfonsino”, Kinmedai is a savoury, striking and popular Neta that I – anecdotally, of course – have seen on menus far more often over the past decade. It’s a white-fleshed fish (shiromi) that still brings the fat, and if you can’t taste the decadence we need to have a talk.
