Sawara is the sushi equivalent of a startup that rocketed to IPO superstardom. It’s both incredibly popular on menus inside and outside Japan (including cooked and as Sashimi), but it’s also a relatively recent addition to the Neta rotation. Like other fish, depending on its size, the name of the fish may change. 

Like Sugarfish, but good.
