Anago

アナゴ | Saltwater Eel
Type: Nimono
Season: All-year

It’s a common misnomer that all sushi is served raw. Case in point, Anago, the saltwater eel, which is served simmered (not torched) in what is called a tsume reduction, though that’s a bit redundant, since nitsume means reduction in English.
