Chu-Toro

中とろ | Medium fatty tuna
Type: Akami.
Season: All-year.

The “medium” fatty part of the Tuna (Maguro), chu-toro is considered by many to be the perfect cut; not overly lean, not overly fatty. A wonderful, balanced harmony, with a few different english names; after all, it’s not a fish, it’s a cut. 

One of the biggest misconceptions is the visual appearance, because it’s not uniform from season to season, from part to part, or from Tuna to Tuna. That said, you’ll want to make sure what you’re being served isn’t ruby red.
