Not much confuses me more in the sushi world than the English translations of the fish in the Yellowtail/Amberjack family. Like its relatives, the Hiramasa taste is a wonderful harmony between marbled and savory. The big difference is Hiramasa is in shorter supply, making it more expensive and difficult to find at your local sushiya.
