Katsuo in Japan has two seasons: in spring, when it leaves to spawn, it’s lean. In fall, when it returns, it’s heavier and filled with delicious fat. In fact, estimates from The Sushi Menu Book have it as weighing twice as much. Basically, Katsuo is me on vacation: Leave in shape, come back weighing double.
