When I think of winter tane, I think of Kuromutsu, a fish that like many of us, puts on considerable fat in the colder months. Interestingly, that excess fat was one of the reasons Kuromutsu wasn’t as popular in sushi courses. However, fattier fish are more en vogue these days than they were before, and Kuromutsu does not have that fatty taste like, say,  O Toro. In restaurants, you may see it labeled as “Blue Fish”, though it’s visually stunning when prepared properly regardless of the english name.
