Tai is another Neta that can confuse customers (and really, sushi restaurants) when translating from Japanese to English. Colloquially, certain shops may call it Madai as well, though that’s really just one fish in the family that includes snapper, porgy and more. Look for a good balance between fat and flesh as well as a reddish hue running down the side.
