If you’ve never seen Taira-gai before, think “oysters on steroids”. The shell itself gets in at around a foot in length (about 30 cm for the metric users). Like other shellfish, a smart chef will make a few incisions along the length of the Taira-gai to make it easier to bend into the shape required for nigiri.
