“The Egg”, as Wags in Showtime’s Billions so eloquently put it, is actually far more than just egg. Different shops will have different recipes, but expect a mix of sweet (sugar, mirin) and salty (prawns, salt, fish paste).  Tamago is commonly served at the end of the meal because of the sweetness, but don’t expect a sugar rush.
