First brought over from Russia – Ikura is actually derived from the Russian word “Ikra”, meaning fish eggs – Salmon Roe is now a staple as Gunkan Maki on sushi menus from high-end omakase joints to your neighborhood all-you-can-eat for virtually the entire calendar year. Each restaurant will have a different approach to serving, but expect a soy-sauce and sake type marinade to draw the flavours out.
