Gourd, a Japanese vegetable with possible roots in Africa, is pickled as part of a process that breeds Kanpyo-maki. This isn’t the ‘cut and roll’ process your local spot does for its cucumber rolls either; Kanpyo is traditionally made by boiling cut strips in water multiple times, followed by a simmer in a mix of sugar and shoyu. It’s a great palate cleanser at the end of the meal.
