Sardines get a bad rap normally – I bet a bunch of you wouldn’t touch the canned stuff with a ten foot pole – but they’re delicious and full of nutrients. The version in sushi is Iwashi, and presuming the chef properly removes the many bones and adds the proper accompaniments (e.g. a pinch of green veggie), it’s worth a try (duh).
