Is there a prettier hikarimono than the Kohada or its younger buddy, Shinko (or older friends Nakazumi or Konoshiro)? It’s delicious but not overpowering, making it a perfect “entry-level” tane for someone looking to expand their sushi horizons beyond the standard North American sushi fare. Beware the tiny bones that sometimes hang around.
