Most of the time, you’ll hear me rail against extravagant toppings. Too much flavour and you taste nothing. In the case of Kawahagi though, pairing the white fleshed fish with its own liver (dressed in Ponzu) is the sushi equivalent of a hearty PB&J. Match made in heaven.
